Our kitchens are full of equipment- gas burners, induction cookers, microwave ovens, OTGs and matching pots,pans and dishes, mixer-grinders, juicers, refrigerators and so on. Knives,crockery, cutlery, plates, bowls, glasses and so on. Water and electricity. Punjabi kitchens have rows and rows of slabs filled with jars of spices and lentils.                                                                                                                                                           We have large bins of wheatflour and rice. Jars of gramflour, flour and different lentils. Daily used spices are salt, turmeric, chillies/pepper, garam masala (mixture of several spices), roasted and ground coriander seeds. Other spices are mustard seeds, fenugreek seeds, cumin seeds, carom seeds, dried mango powder, dried ginger powder and so on. We have mustard oil, refined oil, pure ghee and olive oil. Tea and sugar are a must. Coffee, jaggery are also used.                                                                                                                                                When we fast, we skip salt. So, I guess chillies/ pepper is the most important ingredient in the kitchen. However, the secret ingredient to good cooking is the love and dedication of the cook.
